THAI PEANUT CHICKEN
1 Tbsp. wok oil (peanut or canola)
1 lb. skinless, boneless chicken cut in bite-size pieces
1 red bell pepper
1 1/2 c. chicken broth
2 tsp. soy sauce
1 Tbsp. sugar
1 clove garlic, minced
1/4 tsp. cayenne pepper
1 tsp. ginger
1 Tbsp. cornstarch
1 1/2 Tbsp. crunchy peanut butter
1 handful cilantro, chopped
green onion to your liking
2 c. dry roasted peanuts
Heat oil in a wok (or good size pan) over medium heat. Cook chicken in wok until juices run clear. Mix in red bell pepper, and continue cooking until tender. In a bowl, mix the broth, soy sauce, sugar, garlic, cayenne pepper, ginger, cornstarch, and peanut butter. (JUST A TIP: WHEN YOU MIX IN CORNSTARCH WITH ANYTHING, ALWAYS MIX IT WITH A LITTLE BIT OF COLD WATER AND THEN POUR IT INTO YOUR MIXTURE SO THAT IT DOESN'T CLUMP UP) Pour into wok. Toss green onions and cilantro (reserve some for garnish) into wok and continue to cook for 5 minutes until thickened. Mix in peanuts.
